Elaboration:

Controlled fermentation in stainless steel tanks. Native yeasts. Stabilization is sought by successive withdrawals. Fermentation control is done by successive draws. Unpasteurized cider. Bottling from March to April.
Density: 1060 after pressing, or 134g of sugar per liter.

Tasting:
