Mezcal Clase Azul is created using 100% Cenzino Agave, which grows wild in the state of Durango. The underground baking process produces sweet notes of peanut, brown sugar, honey, ash, wood and chocolate. The fermentation process using stone piles and red oak, contribute to notes of ripened fruit.
About this mezcal
Clase Azul Mezcal Durango is made with wild maguey Cenizo, which takes 12-15 years to mature. The maguey Cenizo grows somewhat abundantly in Durango, where this mezcal is made. Clase Azul follows the same traditional palenque distillation process as any other artisinal mezcal. One impressive point about this mezcal is that the agave is milled by hand, rather than using a donkey and tahona.

Clase Azul is primarily a tequila company, but they also release mezcal. Their first mezcal release was made in the state of Durango where the extreme climate, the rich minerals of its soil, and the source of natural springs in the area, give particular force and complexity to its notes, making it a different mezcal than what is produced elsewhere Mexico. Their second release comes from the state of Guerrero. Both are packaged in tall and ornate ceramic bottles.
